Ingredients
- 2 TBS butter
- 6 large eggs
- 4 oz cream cheese, softened
- 1/2 cup chopped scallions
Preparation
Step 1
1. Place a large skillet over medium-low heat. Add butter.
2. Place eggs in a small mixing bowl. Beat with a wire whisk. When butter has melted, add beaten eggs, cream cheese, and scallions to skillet.
3. Cook egg mixture, stirring constantly to scramble, until eggs are cooked through. Serve with muffins and fruit.
