Buffalo Chicken Pizza

Ingredients
- 2 Tbsp butter
- 1 Tbsp extra virgin olive oil
- 4 stalks clelery, chopped
- 2 medium carrots, chopped
- 2 cups cooked chicken, chopped
- 1/2 cup Franks Red Hot Sauce
- Pizza dough
- 1/4 cup Feta cheese
- 1/4 cup monterey Jack cheese

Step 1
Preheat oven to 400F
In a large skillet over med-high, melt butter and oil together and cook the celery and carrots till tender, approx 4 mins. Add the chicken and hot sauce to the pan and toss. Set aside and let cool.
Roll out the pizza dough into two medium crusts and prebake for about 7 minutes turning halfway through (or use prepared crusts). Spread cooled filling evenly, bake for about 13 minutes, top with cheeses and continue to bake until golden and cheeses have melted.
*for less spicy pizza use only 1/4 cup hot sauce and 1/4 cup tomato sauce.
*for really moist chicken put two chicken breasts in casserole dish cover with stock and cook at 350 till done, discard stock, shred chicken.
*delicious change up-omited cheeses and substituted crumbled boursin cheese-yum!
