Cream of Broccoli Soup

Ingredients

  • 1 Tablespoon Butter
  • 1 cup Chopped Onion
  • 2 teaspoons Minced Garlic
  • 3 cups Chicken Broth
  • 1 package Broccoli Florets (16 Oz)
  • 2-1/2 cups Milk
  • 1/3 cups Flour
  • 12 ounces Grated Cheddar Cheese

Preparation

Step 1

1. Heat a medium sized pot coated with the butter over med.-hi heat. Add the onion and the garlic, and saute until tender, about 3 minutes. Add broth and and broccoli, bring to a boil over med.-hi heat. Reduce the heat to medium, and cook 10 minutes.

2. Combine the milk and flour, stirring with a whisk until well blended. Add the milk mixture to the broccoli mixture and cook five minutes or until slightly thick, stirring constantly. Stir in cheese until melted.

3. Place 1/3 of the soup in a blender or food processor and process until smooth. Return pureed soup mixture to pan.
