Cannellini Pesto

Serve with platter of crisp, fresh green beans and celery sticks for dipping

Ingredients

  • 2 (16oz) cans of cannellini beans or other white beans, rinsed and drained
  • 1 cup basil leaves
  • 2 tbsp. grated fresh parm cheese
  • 2 tbsp. water
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1 garlic clove, crushed
  • 1 tbsp. pine nuts, toasted
  • basil sprigs

Preparation

Step 1

place first 7 ingredients in a food processor; process until smooth. add nuts; pulse 5 times or until nuts are chopped. place mixture in a bowl. garnish with basil sprig, if desired.
