Southwest Grilled Chicken Salad

Ingredients

  • 8 cups romaine lettuce, chopped
  • 1/2 cup corn, fresh or frozen
  • 1 cup canned black beans, low sodium, rinsed and drained
  • 1 cup grape tomatoes, halved lengthwise
  • 1/2 cup Panera® Southwest Caesar Dressing
  • 1 lb. chicken, grilled and cut into strips
  • 1/2 cup tortilla strips
  • 1 cup each diced avocado and fresh, chopped cilantro (optional)

Preparation

Step 1

In mixing bowl, combine greens, corn, beans, tomatoes, and dressing. Gently toss.
Divide salad among 4 plates. Top with chicken and tortilla strips. Garnish with avocado and cilantro, if desired.
