Three Bean Salad

Ingredients

  • 1/4 cup cider vinegar
  • 3 tbsp. grated onion
  • 1 tbsp. sugar
  • 3 tbsp. extra virgin olive oil
  • 2 tbsp. Dijon mustard
  • 1 tsp minced garlic
  • 1/2 tsp dry mustard
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp kosher salt
  • 1 lb green beans, trimmed
  • 1/2 cup minced red onion (about 1 small)
  • 1/2 cup chopped fresh flat leaf parsley
  • 1/3 cup sliced green onions
  • 1 (15.8oz) can great northern beans, rinsed and drained
  • 1 (15oz) can kidney beans, rinsed and drained

Preparation

Step 1

combine the first 9 ingredients in a small bowl, and stir with a whisk.

steam green beans, covered, 5 mins or until crisp tender. drain and rinse with cold water; drain. cut beans into 1 inch pieces, transfer to a large bowl. add red onion and remaining ingredients to a bowl. add vinegar mixture to bean mixture, tossing well to coat. cover and chill 4 hours.
