Ingredients

  • 6 six inch squares of cheesecloth
  • 8 oz pkg cream cheese, softened
  • 1/2 t vanilla
  • 1/4 cup confectioner's sugar
  • 1/2 cup whipping cream
  • 1 recipe peach/orange sauce or raspberry or strawberry sauce
  • fresh fruit slices
  • fresh mint springs (optional)

Preparation

Step 1

Line six 3" molds or 1/2 cup molds with damp cheesecloth to hang over edges.

Beat together cream cheese and vanilla. Gradually add sugar, beating at medium speed until fluffy. Beat whipping cream to soft peaks and fold into cheese mixture. Spoon into molds. Cover and chill several hours.

To serve, invert onto plate. Holding on to cheesecloth ends, lift off mold. Peel off cheesecloth. For molds without handles (ramekins) let molds set upright in refrigerator for several hours until set. Then invert onto paper toweling leaving cheesecloth intact. Chill several hours to drain and firm up.

Serve each with fruit sauce.
