Ingredients
- 2 cup plain flour
- 1 tsp sodium bicarbonate
- 1 tsp salt
- freshly milled pepper
- 1/2 cup pine nut
- 1/2 cup almond
- 1 middle sized zucchini
- 2 eggs
- 100 g ham – I used beef ham with green pepper
- 1/2 cup yoghurt
- 1/2 cup sunflower oil
Preparation
Step 1
Preheat the oven to 180 °C.
Roast the pine nut carefully in a dry pan until golden brown. Put the almond – without blanching –
in a food processor and grind. Add the ham and push the pulse button some times. Roughly grate the zucchini.
Stir in the flour the pine nut, almond, sodium bicarbonate, salt and pepper. Lightly beat the eggs, stir in the grated zucchini, yoghurt and oil. Then in a bigger bowl stir well all the ingredients.
Oil well a bread tin pour in the dough and bake for 80 minutes.
