Ingredients
- 12 hard boiled eggs, peeled and coarsely chopped
- 3/4 cup mayo
- 1/4 cup chopped scallions
- 1 1/2 tsp curry powder
- salt and pepper to taste
- 2 loaves (20oz each) raisin walnut bread, sliced
- 1 bunch watercress, cleaned and trimmed for garnish
Preparation
Step 1
in medium bowl combine eggs, mayo, scallions, and curry powder. season with salt and pepper.
with a 2" round cookie cutter, cut bread into rounds. spread with egg salad and top with watercress sprig.
