Ingredients
- 4 lbs Yukon gold potatoes, peeled & cubed
- 4 t kosher salt
- 1 c mayo
- 2/3 c dill pickle relish
- 1/2 c chopped green onion
- 2 t distilled white vinegar
- 2 t Dijon mustard
- 1/2 fresh ground pepper
- 8 hard cooked eggs, roughly chopped
- Garnish: chopped green onions, paprika

Preparation
Step 1
In lg Dutch oven, bring potatoes, salt & water to cover by 1 in. to boil over med high heat. Cook until tender, 10-15 min. Drain.
In lg bowl, stir together mayo, relish, green onion, vinegar, mustard & pepper until combined. Gently stir in eggs & potatoes. Cover & refrigerate at least 1 hr. Garnish with green onion & paprika, if desired.
