Pumpkin Trifle with Gingerbread

Ingredients

  • Gingerbread cake
  • Large Pkg of Vanilla Instant Pudding
  • 15 oz can Pumpkin
  • 1/2 C brown sugar
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • Large tub of cool whip

Preparation

Step 1

1. Make gingerbread cake according to box directions ahead of time and let cool completely

Cut whole cake into thirds

2. Make up Large Pkg of Vanilla Instant Pudding and put in fridge for about 1/2 hr ahead of time

3. Mix can of Pumpkin in a small bowl with:
1/2 C brown sugar
1 tsp vanilla
1/2 tsp cinnamon

4. Fold Pumpkin mixture into the pudding
Don't 'mix' .. just "fold in"

5. In a glass trifle dish – assemble trifle – 3 layers:

Cut 1/3 of the gingerbread into 1” cubes
Layer on bottom of trifle dish
Spoon 1/3 of Pudding/Pumpkin mix over gingerbread cubes
Spoon 1/3 of cool whip over pudding
Repeat 2 more times .. making 3 layers

6. Sprinkle any remaining gingerbread ‘crumbs’ & a little cinnamon over the top layer of cool whip.
