Ingredients

  • 2/3 cup lemon juice
  • 1/2 cup hickory barbeque sauce
  • 1/2 cup butter (or hard margarine)
  • 1/4 cup finely chopped onion
  • 1/2 tbsp brown sugar, packed
  • garlic powder, just a pinch
  • 3 lbs centre section of whole salmon (with skin) cut lengthwise to backbone and opened flat

Preparation

Step 1

LEMON BBQ SAUCE:
Combine first 6 ingredients in small saucepan. Bring to a boil on medium. Reduce heat ato medium-low. Simmer, uncoverd, for 20 to 30 minutes, stirring often, until onion is softened. Makes about 1 cup sauce.

Brush salmon flesh with 1/2 of sauce. Preheat barbeque to medium. Place salmon, flesh-side down, on greased grill. Close lid. Cook for 15 minutes. Turn. Brush salmon flesh with remaining 1/2 of sauce. Close lid. Cook for aboaut 12 minutes, without turning, until salmon flakes easily when tested with fork. Cut into 10 equal portions.
