Ingredients
- 1 c Mayo
- 1 stalk finely chopped celery
- 2 T finely chopped red onion
- 1/2 juiced lemon
- 2 t curry powder (optional)
- 3 lb skin removed roasted chicken, shredded large
- 2 c halved seedless red grapes
- 1/2 c chopped roasted & salted almonds (optional)
- Kosher salt to taste
- Fresh ground black pepper to taste
- Whole wheat bread (optional for sandwiches)
- Lettuce & sliced tomato (optional for sandwiches)
Preparation
Step 1
In lg bowl, combine mayo, lemon juice, curry, salt & pepper. Gently fold In chicken, grapes, celery, onion & almonds.
Taste for seasoning & adjust accordingly.
