Penne frittata with basil and ricotta

Ingredients
- 6 eggs
- 1/2 cup milk
- 1/2 cup ricotta cheese
- 1/4 cup parmesan cheese
- Salt and pepper
- 3 cups cooked penne pasta
- 1/4 cup chopped basil
- 1 tbsp olive oil

Preparation
Step 1
Preheat oven to 400. Whisk together eggs, milk, ricotta, Parmesan, 1 tsp salt and 1/2 tsp pepper. Stir in pasta and chopped basil.
Heat a 10 inch ovenproof skillet over medium. Add oil, swirl to coat. Pour in egg mix and cook until edges are just set. Transfer skillet to oven, bake until set, 10 minutes. Invert onto a plate and reinvert to serve. Let stand for 5 minutes.
