Horchata - The Old Fashioned Way

My daughter loves horchata! I have heard her declare that Mexican restaurants that claim to be Mexican restaurants are not authentic if they don"t have horchata. I think horchata and tamarindo and jamaica drinks remind her of eating at dives with her father. At any rate... I made this for my daughter and she just loved having her own personal jug of horchata.I got this easy recipe from Melindalee.com, she's not a real Mexican and neither am I, I hope my daughter doesn't object. Lol :)

Ingredients
- 2 pounds uncooked rice
- 1 teaspoon cinnamon
- 1/2 cup of sugar (to taste)
- 1 teaspoon vanilla
- ice cubes
Preparation
Step 1
Fill a 1 to 2 gallon crock or jar with cold water and add the rice. Stir slightly and allow the rice and water to stand for two days or longer, as needed. Water will turn milky (wait for this result,it may take a bit longer time).
Pour off liquid into a clean container, straining out the rice. Discard the rice. There may be bottom sediment, which may be added to the liquid if desired, or discarded. Add the cinnamon, sugar and vanilla. Flavor should be similar to a rice pudding. Serve over ice cubes shaking the container or vigorously stirring the horchata before pouring to mix sediment.
