Golden Home Fries

Ingredients

  • 1 1/2 lb small white potatoes
  • thinly sliced
  • 4 tbsp. unsalted butter
  • 1 tbsp. chopped fresh rosemary
  • 4 garlic cloves, thinly sliced
  • salt and pepper to taste

Preparation

Step 1

parboil potatoes 5 mins in 3 quarts salted water, drain well.

melt butter in a large nonstick skillet over medium heat.
add potatoes and saute 7 mins. do not stir. turn potatoes with a spatula and fry another 7 mins, or until golden brown.
Stir in rosemary and garlic; saute 1 min. add salt and pepper.
