Ingredients
- 1/4 cup olive oil
- 1 tbsp. garlic, minced
- 2 tsp red pepper flakes
- 1 tsp kosher salt
- 2 lb Yukon gold or red potatoes cut into 1" thick wedges
Preparation
Step 1
preheat oven to 400 degrees. combine oil, garlic, pepper flakes and salt in a large bowl.
add potatoes and toss to coat. spread potatoes on a baking sheet in a single layer. cover with foil and roast for 15 mins to steam.
remove foil and continue to roast potatoes an additional 30 mins, or until tender and brown, stirring once or twice.
