Step 1
Preheat oven to 450. Put potatoes in a large bowl, toss with oil, salt and pepper. Arrange potatoes in a single layer on two baking sheets lined with foil.
Bake until golden and crisp, 30-40 minutes, rotating sheets and turning potatoes once.
