Ingredients

  • 2 pkg frozen chopped spinach
  • 1/2 cup chopped onion
  • 1 T vegetable oil
  • 2 cloves diced garlic
  • 2 T parsley
  • 8 beaten eggs
  • salt
  • pepper
  • 10 - 12 crumbled soda crackers
  • 2 cups grated cheddar cheese
  • parmesan cheese
  • paprika

Preparation

Step 1

Thaw and drain spinach. Heat oil in large skillet. Saute spinach, onion, garlic and parsley. Add eggs, crackers, seasonings and cheddar. Mix together and pour into greased 9 x 13 baking dish. Sprinkle with parmesan and paprika and bake at 325 for 45 minutes or until knife inserted in center comes out clean.
