Ingredients
- Sauce:
- 2 c graham cracker crumbs
- 1/4 c sugar
- 1/2 c butter, melted
- 3 (8oz) pkg cream cheese, softened
- 1 1/4 c sugar
- 3 large eggs
- 1 (8oz) container sour cream
- 1 1/2 tsp grated lime rind
- 1/2 c key lime juice
- 1 1/4 c fresh strawberries
- 1/4 c sugar
- 1 1/2 tsp grated lime rind
Preparation
Step 1
Stir together first 3 ingredients and press firmly into bottom and up 1 inch on sides of a 9 inch spring form pan.
Bake at 350* for 8 minutes. Cool.
Beat cream cheese with electric mixer until fluffy. Gradually add 1 1/4 c sugar until blended. Add eggs one at a time, then sour cream rind, and juice. Pour batter over crust. Bake at 325* for 1 hour 5 minutes. Remove from oven and run a knife around edges of pan, releasing sides. Cover and chill for 8 hours or overnight.
Serve with sauce: Process strawberries until smooth, add other ingredients, pour over sliced cheesecake.
