Chocolate Pecan Pie

Ingredients

  • 1 pkg (8 squares) Baker's semi-sweet baking chocolate
  • 1 refrigerator pie crust
  • 2 tbs butter
  • 3 eggs, slightly beaten
  • 1/4 c firmly packed light brown sugar
  • 1 c Karo light or dark corn syrup
  • 1 tsp vanilla extract
  • 1 1/2 c pecan pieces

Preparation

Step 1

Coarsely chop 4 chocolate squares and set aside. Place pie crust in pie pan. Microwave remaining 4 squares of chocolate and butter 1-2 minutes or until butter is melted. Stir until chocolate is melted. Brush pie crust with a small amount of beaten egg.
In a separate bowl stir sugar, corn syrup, eggs and vanilla together. Add chocolate mixture. Stir until smooth, add pecans and chopped chocolate. Pour into crust. Bake at 350* for 55 minutes or until a knife inserted 2 inches from the edge comes out clean. Cool.
