Ingredients
- 4 lb. Fryer Chicken (I used wings and drumsticks)
- 2 c. flour
- 2 tsp. Onion powder
- 2 tsp. Garlic powder
- 1 tbsp. Seasoned salt
- 1 tbsp. Ground pepper
- 1/2 tsp. Cayenne pepper
- 5 whole eggs
- 1 c. buttermilk
- 2 tbsp. Hot sauce
- 3 qt. Vegetable oil

Place the fryer chicken drumsticks and wings in a large bowl and season liberally with seasoned salt and ground pepper. This is where you need to “eyeball” your seasoning. Once the chicken looks well coated with seasoning, your done. Allow the chicken to stand alone for, at least 15 minutes. Cover with plastic wrap and place inside of the refrigerator until ready to cook.
Using two separate bowls for the flour mixture and the egg mixture. In one bowl, crack the 5 eggs and whisk very well until whites and yolks are well combined. Whisk in the buttermilk and the hot sauce as well. In the next bowl, add the flour, onion and garlic powder, seasoned salt, ground pepper, and cayenne pepper. Whisk the flour and seasonings together.
Begin to heat the oil in a deep fryer on 350 Degrees. If you do not have a deep fryer, heat the oil in a large pot on the stove to 350 Degrees using a thermometer to check the temperature.
Dip the chicken in the egg and buttermilk combination, dredge in the flour and coat well, and place in the deep fryer and cook for 15 minutes until golden brown.
As soon as the chicken is done, use tongs and turn to a sheet with a cooling rack. As soon as the chicken is transferred sprinkle with a small amount of more seasoned salt. Repeat process until all chicken is cooked.
