Ingredients
- 1 small shallot chopped
- tarragon stems
- 2-3 black peppercorns
- 4 tbsp white wine
- 4 tbsp white wine vinegar
- 2 egg yolks
- 2 tbsp cold water
- 7 oz butter
- Salt and Pepper to taste

Preparation
Step 1
Combine first 5 ingredients over medium heat. Simmer until reduced 15-20 minutes reduce by 2/3. Strain. Combine egg yolks and cold water. Whisk until light and frothy 30 seconds. Heat over medium heat whisking rapidly. Mixture will triple and thicken whisk 5 more seconds. Remove from heat and whisk 20 more seconds. Whisk in butter slowly. Add tarragon reduction and garnish with tarragon leaves.
