Chocolate Crispy Ball

Ingredients

  • 150 g 52% chocolate
  • 120 g crispy bits
  • 50 g carmalised almonds
  • 20 g dried cranberries

Preparation

Step 1

1) Melt 2/3 of chocolate to 50 C then add rest of the chocolate to reduce the tempreture to 30 C
2) Mix the crispy bits with the dried cranberries
3) Roast whole almonds and then coat with caramel
4) Crush almonds to coarse bits
5) Mix into the crispy mixture
6) Pour in melted chocolate
7) Make into ball shapes and put in moulds
8) Chill in refridgerator for 10 - 15 min
