Ingredients
- Penne or Rotini Pasta
- Boneless Chicken Breast shredded
- 4 stalks Celery chopped
- 1 cup shredded Carrot
- 1 1/2 cups Mayonnaise or Greek yogurt
- 1/2 cup Bleu Cheese crumbled
- 5 Tbs lemon juice
- 3 Tbs Dijon Mustard
- 2 - 4 Tbs Hot Sauce
- 2 Tbs Dark Beer (optional)
- 2 Tbs Honey
- 1 tsp Pepper
- 1 tsp cayenne pepper
Preparation
Step 1
Cook pasta according to package direction. Add to a bowl, along with shredded chicken, celery, and carrot. Mix to combine. In a smaller bowl, mix together mayo or yogurt, bleu cheese, lemon juice, mustard, hot sauce, optional dark beer, pepper and cayenne pepper. Pour dressing over pasta mixture and toss well.
