Ingredients
- 4 slices bacon, sliced in ¼” strips
- 1 TB butter
- 8 oz baby bella mushrooms, quartered
- Olive oil
- 2 TB white wine
- 3 cloves garlic, finely chopped
- ¾ cup heavy cream or half & half
- 1½ tsp chopped parsley
- ¼ tsp dried thyme or ½ tsp fresh thyme
- Salt & pepper
- ¼ cup shredded mozzarella cheese
- 2 TB freshly grated Parmesan cheese

Step 1
Preheat broiler in the oven. In a large oven-proof pan, fry bacon over medium heat until crispy. Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Melt butter in the pan. Add mushrooms & drizzle with a little bit of olive oil. Sauté for about 5 minutes. Add the wine & let reduce by half for 2 minutes, stirring occasionally. Add the garlic & stir for a minute. Stir in the cream & herbs. Reduce heat to low & gently simmer for 2-3 minutes until the sauce is slightly thickened. Season with salt & pepper. Add bacon & stir until combined. Top with the cheeses. Broil in the middle of the oven until the cheese is melted & bubbly, about 3-5 minutes. Serve warm as a side or on top of beef, pork, or chicken. Serves 3-4.
