Ingredients
- Sause
- 10 oz chicken stock
- 2 Tbsp. balsamic vinegar
- 1 Tbsp finely chopped-seeded jalepeno
- 1 clove garlic minced
- chicken
- 2-3 Tbsp. olive oil
- 1 tsp. minced jalepeno
- 1 clove garlic minced
- 1 tsp. white pepper
- 1/2 tsp. seasoned salt
- 4 chicken breasts (skin removed) cut into bite sized slices
- 1/2 cup cashews
- 4-6 servings cooked rice

Preparation
Step 1
in a sausepan combine sause ingredients, bring to a boil and simmer covered 4 minutes.
in a saute pan heat oil and saute chicken pieces, add garlic, jalepeno and spices. brown chicken, do not burn the garlic. pour in the sause and simmer until sause is reduced to half. stir occasionally to coat chicken.
serve over rice with cashews.
