  • 1 medium onion minced
  • 1 Tbsp. olive oil
  • 2 Tbsp. butter
  • 2 celery stalks chopped fine
  • salt and pepper to taste
  • 1 bay leaf
  • 2 tsp. thyme
  • 3 Tbsp. flour
  • 2 tsp. hot sause
  • 6 cups chicken stock
  • 1 large can (28oz.) pumpkin
  • 2 cups cream
  • 1/2 tsp. nutmeg

Preparation

Step 1

in a dutch oven, heat oil and butter, saute the onion and celery until tender. add spices and hot sause, cook 1 minute, then add flour whisk to make a roux, cook 1 more minute. whisk in chicken stock then pumpkin, simmer 10-20 minutes on low. add cream and simmer until ready to serve, nutmeg can be added a few minutes before serving.
