Ingredients
- 1/4 c extra-virgin olive oil
- 1 (15 oz) can black beans, rinsed and drained
- 1 c orzo pasta, cooked according to package directions
- 1 small red bell pepper, diced
- 1 small yellow bell pepper, diced
- 1 lime, juiced
- 1 tsp ground cumin
- 1 tsp kosher salt
- 1/4 tsp ground black pepper
- 1/4 c chopped fresh parsley
Preparation
Step 1
In a large skillet, heat oil over medium heat. Add beans, pasta, bell peppers, lime juice, cumin, salt, and pepper; cook, stirring frequently, until heated through, about 5 minutes; stir in parsley.
Serve immediately.
