Chicken and Artichokes

Ingredients

  • 8 boneless, skinless chicken thighs
  • 1/2 cup chicken broth
  • 1 T fresh lemon juice
  • 2 t dried thyme
  • 1 clove garlic, minced
  • 1/4 t freshly ground black pepper
  • 1 (13 oz) can artichoke hearts, drained

Preparation

Step 1

Add all ingredients to the slow cooker, stir to mix.
Cover and cook on low for 6 hours.
If necessary uncover and allow to cook for 30 more minutes to thicken the sauce.

Note: If using marinated artichokes, drain them and omit the thyme and garlic.
