Penne Alla Vodka

Ingredients
- 2 1 pound packages of any penne rigate pasta
- 4 oz (125 g) sliced pancetta or side bacon, chopped
- 3 tablespoons olive oil
- 1/2 cup diced white onion
- 1/4 cup chopped green onion
- 3 teaspoons chopped garlic
- 2 tablespoons chopped shallots
- 3 oz (90 ml) vodka
- 2 cups 35% cream
- 4 cups plum tomato sauce
- 1/4 cup chopped fresh parsley
- salt and pepper to taste

Preparation
Step 1
1. Prepare pasta in boiling, salted water according to package directions.
2. In a heavy skillet, saute pancetta in oil until browned then add onions, garlic and shallots. Cook until onions are tender, deglaze pan with vodka then reduce heat and simmer until liquid is reduced by half.
3. Pour in cream and simmer 5 minutes until reduced by half and then add hot tomato sauce.
4. Simmer 10 to 15 minutes over low heat. Season as desired and add half the parsley.
5. Toss pasta with sauce. Sprinkle remaining parsley.
