Ingredients

  • 2/3 cup brown rice flour
  • 2/3 cup cornstarch
  • 1/2 cup soy flour
  • 1/4 cup masa harina
  • 1 – 1/2 tsp. xanthan gum
  • 2 tsp. sugar
  • 1 tsp. salt
  • 1 cup warm water

Preparation

Step 1

1. Thoroughly mix the dry ingredients together.

2. Add the water to the dry ingredients and mix until a nice firm ball forms.

3. Separate the dough into 8 pieces and roll each piece into a ball. Place all but one of the dough balls back into the mixing bowl and cover with plastic wrap until you are ready to work with them.

4. Sprinkle a clean flat surface with a bit of rice flour and then roll your dough ball into a thin round shape. (I suck at this…so I roll the dough out as thin as possible and then trace out a dinner plate with a pizza cutter).

5. Cook the tortilla on a hot griddle for about 1 minute on each side. The tortilla will start to puff up slightly and light brown spots will appear…this is how you know when to flip the tortilla.

6. Slide the cooked tortilla onto a plate and Voila! Repeat from step 4 until all tortillas are cooked.


_Tip:_
Be careful not to overcook the tortillas, if you do they will become crisp and brittle.


_Variation:_
You can jazz up your tortillas by adding different flavors to your dough. For example:
* tomato paste
* puréed spinach
* grated cheese.
