Ingredients
- 4 oz meat or 5 shrimp
- 1 egg, beaten
- 1 oz onions large dice
- 1 oz celery, cut on the bias
- 1 oz wavy cut carrots, blanched
- 1 tbsp ginger, minced
- 1 tbsp garlic, minced
- 1 oz scallions, chopped
- 1 oz oyster sauce
- 1 oz soy sauce
- 1 tbsp dark mushroom sauce
- 1 tbsp sesame oil
- 8 oz cooked white rice

Preparation
Step 1
Stir fry the meat in hot oil for 1 minute then add the vegetables and stir fry 45 secs. Strain and add egg cook through and strain. Add ginger and garlic and brown off then fold in rice. Add oyster sauce and soy and mix well. Add dark mushroom soy sauce and mix well. Fold in meat and vegetables and garnish with scallions.
