Ingredients
- BOTTOM LAYER:
- 1 1/4 cups flour
- 1/3 cup brown sugar, packed
- 1/2 cup hard margarine, softened, cut-up
- SECOND LAYER:
- 2 large eggs
- 1 1/4 cups brown sugar packed
- 1 tbsp all purpose flour
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1 cup medium unsweetened coconut
- 1/2 cup chopped walnuts
- 1/2 cup chopped red glazed cherries (or maraschino cherries, blotted dry)
- VANILLA ICING
- 2 cups icing sugar
- 1/4 cup hard margarine, softened
- 2 tbsp milk (or water)
- 1 tsp vanilla
Preparation
Step 1
BOTTOM LAYER: Combine flour and brown sugar in small bowl. Cut in margarine until mixture resembles fine crumbs. Press firmly in ungreased 9x9 inch pan. Bake in 350 oven for 15 minutes. Remove from oven.
SECOND LAYER:
Beat eggs in medium bowl until frothy. Add remaining ingredients, in order given, stirring after each addition. Spread evenly over bottom layer. Bake for about 25 minutes until golden. Let stand in pan on wire rack until cooled completely.
VANILLA ICING:
Beat all 4 ingredients in small bowl until smooth, adding more milk or icing sugar as necessary until spreading consistency. Spread evenly over second layer.
