Ingredients
- TOPPING
- 1/4 cup brown sugar, packed
- 2 tbsp all purpose flour
- 1/8 tsp cinnamon
- 1 tbsp hard margarine (or butter) softened
- 1 1/2 cups all purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 egg
- 2/3 cup milk
- 1/4 cup cooking oil
- 3/4 cup peeled, shredded cooking apple (such as McIntosh), packed
Preparation
Step 1
Topping: combine brown sugar, flour and cinnamon in small bowl. Cut in margarine until mixture resembles coarse crumbs. set aside.
Combine next 4 ingredients in large bowl. Make a well in centre.
Beat egg, milk and cooking oil in small bowl. Add apple. Stir. Pour into well. Stir until just moistened. Grease 12 muffine cups with cooking spray. Fill cups 3/4 full. Divide and sprinkle topping over each. Bake in 400 degree oven for 15 to 20 minutes until golden, and wooden pick inserted in centre of muffin comes out clean. Let stand in pan for 5 minutes before removing to wire rack to cool.
