Old Fashioned Oatmeal Cake

Ingredients

  • Topping:
  • 1 c uncooked regular oats
  • 1/2 c butter, cut into pieces
  • 1 1/4 c boiling water
  • 1 1/3 c all purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 2 large eggs
  • 1 c firmly packed brown sugar
  • 3/4 c sugar
  • 1 c firmly packed brown sugar
  • 1 c pecans
  • 1 c sweetened flaked coconut
  • 1/2 c butter, softened
  • 1/3 c milk

Preparation

Step 1

Pour boiling water over oats and allow to stand for 20 minutes.
Stir together flour, soda, cinnamon , and nutmeg. Add eggs, one at a time, to oat mixture beating with electric mixture after each egg. Gradually add sugars, beating until blended. Gradually add flour mix. Pour into 9x13 baking pan and bake at 350* for 26-30 minutes.
Remove cake from oven and change setting to broil. Gently spread topping over cake and roil 3 inches from heat for 3-5 minutes or until lightly browned. Let cake cool completely (about 3-4 hours).
