Papaya-Ginger Spiked Snow Cone

Ingredients
- For Syrup:
- 1 peeled papaya, cut into 1-inch pieces
- 2 ounces ginger juice
- 1 cup sugar
- For Snow Cone:
- 1 1/2 ounces syrup
- 3/4 ounce Cocchi Americano Rosa
- 1/4 ounce Cappelletti
- 1/4 ounce lime juice
- shaved ice

Preparation
Step 1
Make Syrup:
Place cut papaya in an airtight container. Add ginger juice and cover with sugar. Refrigerate until juice begins to seep out of fruit, 24-48 hours. Blend and strain.
Make Snow Cone:
Combine syrup, Cocchi Americano Rosa, Cappelletti and lime juice.
Pack a cup with shaved ice. Pour liquid over.
