Ingredients
- 3/4 cup hoisin sauce
- 3 scallions, coarsley chopped
- 5 cloves garlic
- 1 2" piece of fresh ginger, sliced
- zest and juice of two limes
- 2 TB rice vinegar
- kosher salt and ground pepper
- 2 lbs skin-on chicken thighs and drumsticks (seperate pieces)
Preparation
Step 1
1. Prepare the chicken: Preheat grill to medium on one side. Combine the hoisin sauce - the salt/pepper in a food processor; blend until almost smooth. Season the chicken with salt and toss with the hoisin mixture in a large bowl.
2. Grill over direct heat until the skin is crisp, about 5 minutes per side, basting with the extra marinade. Transfer to cooler side of grill; cover and grill until cooked through, about 15 minutes more.
