Ingredients
- 4 oz bacon lardons
- 1 oz shallots
- 1 tsp garlic, minced
- 3 oz mushrooms, sliced
- 2 oz brown sugar
- 1 1/2 oz cider vinegar
- 1 tsp dijon
- 2 oz oil
- 10 oz spinach
- 1 1/2 oz red onion, thinly sliced
- 2 oz garlic croutons

Preparation
Step 1
Render bacon lardons until crisp. Sweat shallots and mushrooms. Stir brown sugar, then remove from heat and whisk in vinegar, dijon, and oil.
Toss all ingredients.
