Ingredients

  • 4 oz bacon lardons
  • 1 oz shallots
  • 1 tsp garlic, minced
  • 3 oz mushrooms, sliced
  • 2 oz brown sugar
  • 1 1/2 oz cider vinegar
  • 1 tsp dijon
  • 2 oz oil
  • 10 oz spinach
  • 1 1/2 oz red onion, thinly sliced
  • 2 oz garlic croutons

Preparation

Step 1

Render bacon lardons until crisp. Sweat shallots and mushrooms. Stir brown sugar, then remove from heat and whisk in vinegar, dijon, and oil.
Toss all ingredients.
