Ingredients

  • 1 c. red ale
  • 3 tbsp. dark brown sugar
  • 1 tsp. salt
  • 1 tsp. turmeric
  • 1 small white onion, chopped
  • 2 cloves garlic, crushed
  • 1/2 c. yellow mustard seed
  • 1/4 c. black mustard seed
  • 2 tbsp. mustard powder
  • 1 c. malt vin
  • 1/2 c. water

Step 1

1. In a small nonreactive saucepan combine ale, sugar, salt, turmeric, onion and garlic. Reduce by half, strain, discard solids and allow liquid to cool completely.
2. In a glass bowl combine mustard seeds, mustard powder and reduced ale, mix well and allow to rest for 15 minutes.
3. Add vinegar, stir, make sure seeds are completely covered by liquid. Cure for 24 hrs, add water and pulse 3-4 times with hand blender.
4. Cure another 24 hrs, pour into food processor and blend to desired consistency.
5. Makes about 12 oz. Keep in refrigerator.
6. Let flavors come together for a week before eating.
