Chicken Sherry with Artichoke Hearts

Ingredients

  • Chicken fryer cut into serving pieces or 4-6 half breasts
  • 1 teas. paprika
  • 1/2 teas. black pepper
  • 1 1/2 teas. salt
  • 6 Tbs. butter
  • 1/4 # fresh mushrooms cut in lg. pieces
  • 1 (15oz) can artichoke hearts, drained
  • 2 1/2 Tbs. flour
  • 1 cup chicken bouillon
  • 1/4 cup sherry (more or less to taste)

Step 1

Preheat oven to 375 degrees.

Salt, pepper and paprika the chicken pieces. Brown the pieces in 4 Tbs. of the butter and place in large casserole. Add the other 2 Tbs. butter and saute the mushrooms for about 5 minutes. Add the flour and stir to coat the mushrooms, stir in the chicken bouillon and sherry and cook for 5 more minutes.

While this cooks, arrange the artichoke hearts between the chicken pieces. Pour the mushroom-sherry sauce over all.

Bake covered for 35-45 minutes.
