Ingredients

  • Tart pastry (pre bought)
  • 1/3 cup sugar
  • 2 tsp cornstarch
  • 1/3 cup whipping cream
  • 1 tsp finely shredded lime peel
  • 2 TBSP lime juice
  • 1 TBSP butter
  • 1/4 cup dairy sour cream
  • Whipped cream
  • green and yellow food coloring

Step 1

Bake tart shells if not pre baked

Combine sugar and cornstarch in a sauce pan. Stir in whipping cream, the 1 tsp lime peel and lime juice. Bring to boil over medium high heat, stirring constantly. Reduce heat, simmer 1 minute, stirring constantly until thickened and smooth. Stir in butter, sour cream and enough coloring to make a light green color. Cool mixture until room temperature. Spoon into tart shells. Cover and chill for 2 to 4 hours.
