Peach Cobbler with Blueberries & Bourbon

Ingredients

  • For the Biscuit Topping:
  • 2 pounds fresh peaches, cut into thick wedges
  • 1 pack (6 oz) blueberries
  • 1 cup brown sugar
  • 3 tablespoons cornstarch
  • 1/4 cup bourbon
  • 1 teaspoon ground cinnamon
  • 2 cups all purpose flour
  • 1/2 cup sugar plus extra for sprinkling
  • 2 teaspoons baking soda
  • 1/4 teaspoon baking powder
  • 6 tablespoons cold unsalted butter chopped into small pieces
  • 4 tablespoons whole milk or heavy cream

Preparation

Step 1

Peahen the oven to 400 degrees F.
In a bowl, toss and combine the peaches, blueberries, sugar, cornstarch, bourbon and cinnamon.
Pour the mixture into a 9 inch cast iron or heavy metal pan.
In another bowl, add the flour, sugar, baking soda, baking powder, butter and 2 tablespoons cream/milk.
Mix until the dough comes together and forms a ball.
Dump the dough out onto your floured work surface and pat into a circle about 1 inch thick.
Using a 3 inch circle cutter, cut out 6 pieces of the biscuit dough and set them on top of the fruit mixture.
Using a pastry brush, glaze the biscuits with the remaining milk and then sprinkle liberally with sugar.
Place the cobbler into the oven and bake for about 25-30 minutes and the biscuits have all risen.
