Ingredients
- 2 medium cucumbers, peeled and roughly chopped
- 1/3 C sour cream
- 1/4 C mint leaves
- 1 T rice vinegar
- 1/2 t kosher salt
- pinch of cayenne pepper
Preparation
Step 1
1. In a blender, puree 1 pound (about 2 medium) peeled and roughly chopped cucumbers, 1⁄3 cup sour cream, ¼ cup fresh mint leaves, 1 tablespoon rice vinegar, ½ teaspoon kosher salt, and a pinch of cayenne pepper.
2. Serve chilled (seasoned with salt and pepper), accompanied by bread and cheese, if desired.
