Shrimp Ceviche

Easy to make shrimp ceviche is healthy and delicious! By par cooking the shrimp in boiling water for only 30 seconds helps start the process of cooking the shrimp. Add more jalapeño, if you like it spicy.

Ingredients
- 4 ounces raw shrimp, peeled and deveined
- 1 lime, juiced
- 1 lemon, juiced
- 1/2 orange, juiced
- 1 tablespoon green onion, sliced
- 1/8 cup cilantro, chopped
- 1 teaspoon jalapeno, chopped
- 1 tablespoon red onion, chopped
- 1/2 teaspoon cumin
- Salt and pepper, to taste

Step 1
Blanch shrimp in boiling water for 30 seconds then put immediately into ice water to stop cooking . Chop shrimp into 1/4 inch pieces. Combine all ingredients for at least 1 hour and serve.
