Crab Cakes

Ingredients

  • 1 lb lump crab meat, shell pieces removed (3 cans)
  • 1/4 cup red pepper, diced
  • 1/4 cup green pepper, diced
  • 2 green onions, finely chopped
  • dash hot pepper sauce or red pepper flakes
  • 1 tsp Old Bay seasoning
  • 2 T finely chopped parsley
  • 3 T mayonnaise
  • 2 tsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp black pepper
  • 1 egg
  • 3/4 cup panko bread crumbs (or 1 1/2 fresh bread crumbs)
  • 2 T vegetable oil or butter?

Preparation

Step 1

Pick over crab to remove any shells.

In large bowl, combine all the ingredients but the oil. Form mixture into balls, and flatten slightly. Coat in more dry bread crumbs. In large nonstick skillet, cook the crab cakes in oil for 4-5 minutes on each side until golden brown.
