Potato "skin" appetizer

Ingredients

  • 1 package (24 oz) shredded hash browns
  • 1 egg, slightly beaten
  • 1 1/2 cups cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/3 cup bacon pieces
  • salt and pepper to taste

Preparation

Step 1

Preheat oven to 400. Mix hash browns and egg in bowl. Spray mini-muffin pan with Pam. Spoon mixture into muffin pan and use mini-tart shaper to press into bottom and up sides. Bake for 30 minutes.

Sprinkle tops with cheese. Bake for an additional 2 minutes until cheese is melted. Place small dollop of sour cream in each cup and top with bacon, salt, and pepper. Serve warm.
