I got this recipe from Christy Elias and made it for Anupama's shower. The ladies at the shower loved them! Just a few were left and Christopher polished them off when he arrived at the end of the shower. They looked so pretty and classy too! I will definitely be making these in the future. Original recipe from Diane Phillips' cookbook, "Perfect Party Food".

Ingredients

  • 1 lb fresh mozzarella cheese, preferably the small balls
  • 1 cup extra virgin olive oil
  • 2 t dried oregano
  • 1 clove garlic, minced
  • 1 t salt
  • 1/2 t freshly ground black pepper
  • 1 container small, sweet cherry tomatoes
  • basil leaves
  • balsamic vinegar for drizzle

Step 1

Put the mozzarella in a medium-size bowl, pour the oil over it, and sprinkle with oregano, salt, and pepper. Stir to blend. Make sure cheese is submerged in oil.

At this point, you can cover and refrigerate up to 3 days. Allow to sit at room temperature for 2 hours before serving.
(My note: this is an important step because the olive oil solidifies in the refrigerator, so you need it to come to room temperature so that you can remove the mozzarella balls.)

To prepare for serving:
Stir the cheese to coat with the marinade and serve with toothpicks OR (this is the preferred way) alternately skewer 2 small mozzarella balls and 2 small cherry tomatoes with freshly torn basil leaves in between the tomatoes and cheese for color and flavor.

Place the skewers on a platter and drizzle balsamic vinegar over the tops. Repeat...serve at room temperature.

My notes: this looks so pretty and elegant, and tastes great! I found small mozzarella balls at Costco. The mozzarella balls are in small individual packs of 3 in a large bag. I purchased one of them and used all of them with 2 small containers of tomatoes. I didn't have any small skewers and couldn't find any to purchase, but I had long skewers so Chuck cut them to size and smoothed any rough edges. Since then I found a package of wooden sandwich picks that are slightly larger than a large toothpick. I think these can work for a smaller serving of just 1 tomato & 1 mozzarella ball with basil in between. Doubt it will be quite as pretty, but would function well for a small serving.
