Ingredients
- 1 pound sirloin steak
- 1 teaspoon olive oil
- 1 onion, finely diced
- 1 cinnamon stick
- 4 cloves
- 1 bay leaf
- 2 cups beef stock
- 4 8-inch tortillas
Preparation
Step 1
Trim steak of any excess fat any cut into 3/4 inch cubes.
Heat oil i a skillet. Add onion and cook over medium heat for 2-3 minutes or until golden brown. Add the meat, cinnamon stick, cloves, bay leaf and beef stock. Bring to a boil, then reduce heat and simmer covered for 1 1/2 hours or until the meat is soft and liquid is almost absorbed.
Remove cinnamon stick, cloves and bay leaf. Shred the meat with tow forks. Place the meat evenly down the center of each tortilla. Roll up the burrito. Serve with bottled salsa and red onion, or with green vegetables or a salad if desired.
