Chicken Parmesan lasagna

I combine two of my favorite food is chicken Parm and lasagna to make this delicious chicken Parmesan lasagna the perfect Family friendly – to feed a large crowd

Ingredients
- For the chicken :
- 4-(32 ounce) boneless skinless chicken breast sliced in half lengthwise to make it
- 3/4 cup seasoned breadcrumbs
- 1/4 cup grated Parmesan cheese
- Two large eggs beaten
- Olive oil spray
- For the lasagna :
- 15 ounce container part skim ricotta cheese
- 1/2 cup grated Romano or Parmesan cheese
- 1/4 cup chopped basil
- Four - 3/4 cups marinara sauce
- 9 ounce box no boil lasagna noodles
- 3 cups baby spinach
- 3 cups part skim shredded mozzarella cheese
Preparation
Step 1
Preheat oven to 425°F spray large baking sheet lightly with spray
Combine breadcrumbs and Parmesan cheese in a bowl beat the egg in it combine breadcrumbs and Parmesan cheese in a bowl beat the egg in another bowl
Dip the chicken into the eggs then into the breadcrumb mixture discard the remaining crumbs
Place the chicken on the prepared baking sheet lightly spray the top with oil bake in the oven for 25 minutes
Meanwhile combined the regatta Parmesan and basil in a medium bowl
And a 9 x 13 x 3“ Pyrex deep dish baking dish ladle 3/4 of the marinara on the bottom of the dish
Arrange three lasagna noodles across the dish they will expand as they cook top with 3/4 cup sauce four pieces of chicken 1/4 of the ricotta cheese mixture 1/2 cup mozzarella cheese 3/4 cup spinach
Repeat the second layer skipping the chicken
Repeat the third layer with the chicken and the fourth layer without the chicken
For the fifth layer spread the last three sheets of pasta noodles with the remaining one and a half cups of marinara sauce on the top
Cover with voile and bake in a 400°F preheated oven in the central rack for 50 minutes
Uncover adding the remaining cup of mozzarella and bake until melted five minutes
Remove from oven and let it rest 15 minutes before serving
To freeze and serve PP unbaked of Sonia any freezer to oven safe Pyrexx deep baking dish cover tightly with foil and freeze for up to three months removed from the freezer and let it thaw in the refrigerator for 24 hours before baking to bake covered with foil and bake at 400° preheated oven in the center rack for 50 to 60 minutes uncover add the remaining cup of mozzarella and bake until melted five minutes remove from oven and let it rest 15 minutes before serving
